Chicken Taco Salad

Ingredients
2 tbsp fat free sour cream1/2 boneless chicken breast (4 oz)2 tsp low sodium taco seasoning1/8 cup finely shredded sharp cheddar cheese1/2 cup canned black beans, drained and rinsed1 1/2 cups Romaine lettuce (about 3 leaves)1 tbsp Frog Ranch Mild Salsa
Directions
1. Chop up chicken breast. Spray nonstick pan with cooking spray; heat 1 tsp extra virgin olive oil in skillet. Add 1 tsp taco seasoning to skillet; add chicken chunks to mix and cook until no longer pink.

2. Add about 1/2 cup water; cook few minutes longer. Remove chicken from skillet; discard liquid.

3. Mix sour cream with remaining taco seasoning and salsa.

4. Layer romaine, cheese, sour cream mixture, black beans and chicken.
