Spicy Black Bean Burgers

Add in cumin, chili powder, garlic, onion and red pepper flakes to taste. I like a really spicy burger so I add LOTS of each spice. Start with about a teaspoon of each and go from there to suit your tastebuds. Finally stir in the egg and mix well.
Take a large spoonful and form into a patty and fry on each side (using a non-stick pan or a little cooking spray) until crispy. Tastes fabulous in a bun or on its own with a flavored dip (I like to use a little mayo, dijon mustard, balsamic vinegar and Worcestershire sauce stirred together).
These are super easy to freeze into patties that you can cook at any time. Here's how I do it: pull off a piece of wax paper about 12 x 12 and put 4 good-sized spoonfuls about 2 inches from each corner. Put another piece of wax paper on top and press down to form patties. Then cut the wax paper in half each way to separate the patties. Once I've made all the patties, I slide them into a large ziplog bag and pop them into the freezer. I can pull out a single patty at any time and cook it up in about 10 mins, from frozen.
