Sarah's beef and courgette lasagne

2 tbsp olive oil1 medium onion, chopped500g minced beef1 medium courgette1 400g tin chopped tomatoeslasagne sheets (about 6)1 pint semi-skimmed milk1.5 tbsp corn flour3oz cheddar cheese, grated
put the oil in a large pan and add the chopped onion and courgette
cook until soft, then add the minced beef.
Cook until brown, then add the tomatoes.
bring to the boil, then simmer until sauce thickens (about 10 minutes)
Mix the corn flour with 3 tbsp of the milk to form a thick paste.
Bring the milk to the boil then add the paste. Simmer until thickened. Add in 20z of the cheese and stir until it has melted.
layer lasagne sheets, meat sauce and cheese sauce, finishing with cheese sauce, and sprinkle the remaining cheese on the top.
Cook on gas mark 5 for 25-30 minutes until the pasta is soft, and the top is browned.
Serve with salad.
