Ingredients
I garlic clove, peeled1 shallot, peeled1 red pepper, seeded3 medium ripe tomatoes, quartered1 medium cucumber, peeled and quartered1 tsp salt1/4 tsp pepper2 Tablespoons olive oil3 Tablespoons sherry or balsamic vinegar1/2 cup ice water
Directions
Add all ingredients to a blender. Blend to desired texture. Chill.
