Prawn noodles with tomatoes, basil and chilli

Marinade on the prawns in a drizzle of olive oil, chilli and salt. Slowly caramelize the onion, garlic in the remaining olive oil. Add in the fresh tomatoes, white wine and herbs, bring to a low simmer for 10 minutes. Add in the remaining chilli and tamatoe paste, allow to simmer gently while cooking the prawns. In a separate frying pan or grilling machine sear the prawns on a very high heat until they turn a light pink.
Serve with the noodle as a base, the home made tomatoe pasta sauce on top and the prawns in the middle in a heap with fresh parsley to garnish!
