Morning Glory Muffins

Ingredients
Vegetable Oil, ,25 cupegg white, fresh, 2 large Egg, fresh, 1 large Butter, salted, .5 cup vanilla extract, 1 tbsp*Whole Wheat Flour, 2 cup Granulated Sugar, 1.25 cup Baking Powder, 2 tspBaking Soda, .5 tsp Salt, .5 tsp Cinnamon, ground, 1 tbspCarrots, raw, 2 cup, choppedApples, fresh, 1 medium Coconut, raw, .5 cup, shredded Craisins, 0.5 cup
Directions
Preheat oven to 375.

wisk together butter, eggs, egg whites, oil.

sift dry ingredients. Slowly mix in carrots, apples, craisins and coconut. Add wet ingredients.

Put in muffin tins and bake 15 to 20 minutes.
