Ingredients
*Sorrento Part-Skim Ricotta Cheese, 2 oz *Coconut Milk, 2 tbsp Vanilla Extract, 1 tsp *Almond Extract, 1 tsp **Truvia (Zero Cal Stevia) 1 packet Pistachio Nuts, about 20 nuts, shelled
Directions
In a small bowl mix ricotta, coconut milk, vanilla and almond extract, and stevia until smooth. Crush pistachios in a mortar and pestle or with a rolling pin until they are large chunks. Stir pistachios into the ricotta mix, reserving a few to sprinkle on top.
