64 oz fat free Chicken Broth1 package udon noodles, cooked as directed2 cups kale, chopped4 mushroom, sliced1 cup scallions, chopped1/2 block firm tofu, cubed**CROCK POT RECIPE
1. Boil and cook udon noodles as directed. Chop and slice all ingredients.
2. In the crock pot, pour chicken broth, kale, mushrooms, and scallions. Turn on high.
3. Once the udon noodles are cooked to the desired consistency (app. 15 minutes), DO NOT DRAIN.
4. Turn crock pot heat down, add tofu and udon noodles. Leave for about 20 minutes. Kale should be tender.
5. Serve hot!
