West African Chicken Stew

Ingredients
saute in 1 tbsp of olive oil:2 tablespoons chopped garlic1 cup onion chopped1 large potato cubed1 teaspoon ground cumin seed1 teaspoon ground corriander seed1 Tablespoon black pepper1 teaspoon red pepper flakes1 teaspoon salt1 cut up roasting chicken in piecesCover well to season. Allow to cook on med heat for 20 -30 mins. remove chicken pieces from the pot and remove skin and bones. Cut the meat in bite size pieces and return to pot. Add:3/4 cup peanut butter4 cups cooked/canned garbanzo beans. Allow to simmer, adding water as needed to keep from getting to thick. Serve over rice or couscous or boiled potato.
