Chai Tapioca Pudding

1/4 C Tapioca Pearls1/2 C Water1 Cinnamon Stick1/4 t ground cloves1/4 t ground ginger1/2 t ground cardamomdash ground black pepper1/2 t pure vanilla extract1/4 t almond extract3/4 C Milk1/4 C Half and half
Soak Tapioca Pearls in water for about half an hour. Drain.
Pour milk and half and half into a medium saucepan. Stir in soggy tapioca pearls. Stir in spices and extracts. Bring to a boil over medium heat.
Simmer for 5-10 minutes, or until all the tapioca pearls are completely translucent. There shouldn't be any with white left in them.
Fish out the cinnamon stick. Ladle pudding into four 4oz ramekins. Cool, chill and enjoy!
