Mini Quiche with Ground Turkey

1.3 lb ground turkey1 red bell pepper1 yellow bell pepper1 orange bell pepper2 cups sliced mushrooms (1 pkg)1 large white onion2 16 oz. cartons of liquid egg whites
Cook ground turkey thoroughly in a large skillet. Remove and add to large mixing bowl. In same skillet add diced vegetables and saute until soft. Add to bowl and mix with ground turkey. Season with salt, pepper, garlic salt, etc. to taste.
Spray muffin tin with cooking spray. Using a 1/4 measuring cup, scoop turkey and veggie mixture in each muffin tin. Pour in liquid egg whites until about 1/8 inch from top of each rim.
Bake in 375 degree oven for about 15 minutes, until egg whites solidify and pull away from the edges, with a little browning.
Let cool and either pop out of tin, or cut around edges with small knife and use large spoon to ease out.
Serving Size: Makes 24 individual servings.
