Quinoa Salad

Ingredients
Quinoa - 1 1/2 cups dry + 3 cups water1 avocadogreen onions3 limes - juice and zest1/3 c red onion, finely chopped1 c. bell pepper (1-2 peppers)1 container cherry tomatos, halvedcilantro (abt. 1 cup)mint (abt. 1 cup)1 cup cucumber1 chicken breast, cooked and sliced1/4 cup olive oil (more or less to taste)saltpeppercumin and coriander to taste
Directions
Just cook the quinoa, combine everything and cool! Feel free to add more or less of your favorite veggie that you think would go.
