8 medium apples, peeled, cored and sliced (8 cups)2 T fresh lemon juice1 tsp cinnamon3 T butter1 T maple syrup6 tortillas
Toss apples with lemon juice and cinnamon in a bowl. Melt butter in skillet. Stir in apples, cover, and cook over medium heat for 5 to 10 minutes, stirring occasionally, until tender but still firm. Stir in maple syrup.
Warm a lightly oiled skillet on high het. Place a tortilla in the skillet and heat for 1-2 mins. Flip in over, place 1 cup cooked apples on one half and cook for another 1 1/2 mins, until tortilla is crisp and lightly browned. Fold in half, transfer to warm serving platter, cover with clean towel. Serve immediately.
