Peanut Butter Cookies

Ingredients
1 cup chunky or creamy peanut butter1 cup vegetable shortening1 cup splenda1 cup firmly packed brown sugar2 eggs1 teaspoon vanilla extract21/2 cups all-purpose flour1/4 teaspoon salt1/2 cup chopped salted peanuts (optional)
Directions
1. Preheat oven to 375. Combine the peanut butter, shortening, splenda and brown sugar, egg and vanilla in a large bowl. Beat with an electric mixer set on medium speed until blended, about 2 minutes. Add flour and salt. Beat with the mixer on low speed, about 1 minutes. Stir in peanuts, if desired.

2. Shape the dough into 1-inch balls and place on ungreased baking sheets. Flatten the balls in a criss-cross pattern using s fork dipped in splenda.

3. Bake the cookies until golden and set, 9-11 minutes. Cool the cookies on the baking sheets for a minute. Transfer the cookies to wire racks to cool completely.
