Veggie Ragu

Ingredients
Sweet Pepper 2 largeOnions, raw, 1large Red Ripe Tomatoes, 3 large whole (3" dia) Mushrooms, fresh, 13 large Zucchini, 2 cup, sliced Cabbage, fresh,.5 head, large head Olive Oil, 2 tbspSalt and pepper (to taste, along with any other prefered spices)
Directions
PREHEAT OVEN TO 370
slice the onions into thin slices, and place at the bottom of a baking pan.
Then, grade the tomatoes and place them into a seperate dish on the side.
Next cut the remaining veggies into large pieces,add salt, oil and pepper. Mix well.
Place remaining veggie into the pan and cover with the graded tomatoes.
Cover with foil
cook 1.5 hours at 375 degrees

    Personally my family likes it, but I have used just pam spray on the bottom of the pan and alittle olive oil on the veggies (less than a tbspn)

    Thank you for this. Every recipe I find has pasta, rice or something I can't eat any more. This is wonderful because I can add extra veg and also tofu for protein. - 2/19/11

    I am so happy you found this useful! Sorry I didnt include under what temp to ccok it under, I didnt think anyone would use te recipe and primarily posted it for the calorie count. So glad you liked it =] (I fixed it now )
