Cacik Yogurt and Cucumber Sauce

1 cucumber peeled, seeded and chopped (1.5 cups yield)2 garlic cloves pressed1 tsp salt1 tbsp white wine vinegar1 tbsp extra-virgin olive oil1 1/2 cups nonfat greek yogurt (I use Fage)2 tbsp fresh mint leaves chopped
Peel, seed and slice the cucumber into small cubes. Place in a bowl, add salt and set aside for 15 minutes to draw out moisture. Crush the garlic cloves in a garlic press into a bowl large enough to hold sauce. Add salt, vinegar and olive oil and stir. Chop the mint fine. Add the mint and yogurt. I rinse the cucumbers in a strainer to remove the excess salt and remove the water before adding them to the yogurt mixture. Stir and enjoy. I put the mixture in the fridge for an hour or two before eating.
