Adobo Chicken

Ingredients
1-2 lbs boneless skinless chicken thighs3 cloves garlic, minced1 tsp ground ginger3 tsp olive oil1/2 cup water1/2 cup vinegarabout 1/2-1 cup soy sauce to taste1 squirt of mustard, about 1 tsp2 bay leafs, wholeblack pepper to taste
Directions
heat ginger and garlic in oil, add chicken and lightly sear on both sides. Add water, vinegar, soy sauce, bay leafs, pepper, and mustard. Cover and simmer on low for about 45 minutes until liquid has reduced to about half, stirring on occasion, chicken will fall apart wonderfully and come out very tender. Serve 1-2 pieces over cup of rice and enjoy!
