Pork Rind Chicken Tenders

Wet mix:2 eggs2tbs heavy whipping creamsalt & pepper1 tsp hot sauce (I use Louisiana Hot Sauce)Dry mix:1 1/2 bags of pork rinds1 tbs dry Ranch Dressing mix1 tbs garlic powder1 smoked paprika1 tsp black pepper1tsp season saltGrind in food processor until the consistency of bread crumbs4 skinless, boneless chicken breasts, pounded to about 1 inch thick and then cut into tenders. About 6 pieces per breast.
Dredge chicken in egg mixture and then in pork rinds. Heat oil in skillet to about 350, about 1/2 to 1 inch deep, place chicken in hot oil in small batches, do not crowd. Cook 3-4 min per side. Drain on paper towels.
My dipping sauce was 2 tbs of ranch dressing with hot sauce added for a little zing. This added 2 carbs. Chicken is 5 per serving.
