Oatmeal Date Bars

1 cup rolled oats1 cup all purpose flour2/3 cup brown sugar, packed1/2 cup butter (cold)16 medjool dates, pitted and chopped
Mix oats, flour, and brown sugar in a bowl.
Use a pastry cutter to cut in butter, until well-mixed and crumbly.
Meanwhile, pit and chop dates.
Save out 1/2 cup of the oats mixture. Press the rest down a greased 9 x 9 pan to form a solid bottom layer. Sprinkle the dates across this layer, then sprinkle with the reserved oat mixture.
Bake at 350 for approximately 30 minutes. Cool in pan on a wire rack.
Cut into 24 pieces.
