2lb lean ground beef1 large yellow onion chopped1 15oz can tomato sauce1 15oz can diced tomatoes1 28oz can crushed tomatoes3 15oz cans of red kidney beans (or one huge can) DRAINED1 small can diced green chilis1 tbsp olive oil1/4 cup chili powder
Heat olive oil in a large stock pot or stew pot to medium and cook chopped onion until soft. Add the ground beef and brown throughly. Drain off the excess fat/oil.
Add to the pot all the cans of tomatoes, beans (drained), and green chilies. Then add the chili powder.
Stir well and let simmer covered (it gets bubbly and will splatter) on low heat for about one hour, stirring periodically.
Optionally serve with shredded cheese and sour cream on top.
