Fiber One Pumpkin Muffins

1 cup whole wheat flour2 tsp. cinnamon1/8 teaspoon cloves1/4 cup dried sour cherries, chopped1/3 cup non fat dry milk, reconstituted in one cup of water.1 1/2 cups Fiber One Cereal1/2 cup boiling water1/2 cup Egg Substitute1/2 cup canned pumpkin2/3 cup of splenda1 tsp vanilla extract2 tsp baking powder1/2 tsp salt
Pour boiling water on cereal, set aside. MIx wet ingredients, set aside. Mix remaining dry ingredients, set aside. User dried sour cherries. chopped, add to wet ingredients.
Mix everything together just until it is blended - do not over mix.
Bake 375 for 20 - 30 minutes until lightly browned.
These have a very short shelf life. Freeze them and take one our for breakfast the night before.
