Black Bean Salad

Ingredients
1 15 oz can black beans - rinsed 1/2 chopped fresh tomato 1/2 c chopped cucumber or celery 1/2 chopped green or red pepper 1/4 c peeled, cubed avocado 2 tsp fresh squeezed Lime juice 1 clove minced garlic or 1/2 tsp garlic powder 1/8 tsp salt pepper to taste
Directions
Rinse the black beans under running water and drain well. Mix the beans in a medium bowl with the chopped tomatoes, cucumbers, green pepper, avocado and garlic.
Add the lime juice, salt and pepper and mix well.

Serve as a side salad or a fresh dip .

Great source of Fiber.
