Low Carb Feta & Spinach Scramble

Ingredients
2 eggs1/2 cup baby spinach leaves1/2 Italian tomato, chopped1 T chopped onion1/4 cup crumbled feta cheesesalt and pepper to taste
Directions
Chop onion and tomato.
Spray pan with oil
Put on med heat
Cook onions and tomato until tender
Add eggs and spinach and cook to desired consistency
Add 1/2 of the feta cheese and cook until it melts
Plate and sprinkle remainder of cheese and add salt and pepper to taste.
