India Chicken Curry

1/2 cup onion, chopped1/2 cup celery, chopped2 Tbsp extra virgin olive oil1/4 cup all purpose flour1 1/2 tsp curry powder1 1/2 cups fat free chicken broth1 tsp Worcestershire sauce6 oz. tomato juice1/2 lb boneless, skinless chicken breast1/2 tsp salt1/4 tsp black pepper2 cups cooked brown rice
Stew chicken breasts in water for about 25 minutes. Cool and then shred.
In a medium skillet, cook onion and celery in olive oil until tender. Stir in flour and curry powder. Add the chicken broth and Worcestershire sauce. Cook and stir until thick and bubbly.
Stir in the tomato juice and cooked chicken; stir in the cooked rice and heat through.
