Socca Pizza Crust - GF, DF, Vegan

Ingredients
1 T. olive oil + 1 T. olive oil 1 C. cold water 1 C. chickpea flour (also called besan at Indian markets; Garfava flour works, too) 1 t. kosher salt 1/2 t. ground cumin (I omitted, as one nameless person here does not appreciate cumin) 1/2 t. dried rosemary 1/2 t. dried oregano
Directions
I blended all the ingredients in my blender while preheating my skillet in the oven to 450.
After preheating, put 1 T. oil in the skillet & swirl around to coat up to 1/2" on side of skillet and put it back in the oven for a minute.
Take the skillet out and pour in your batter. Bake for 15-20 minutes (mine takes no longer than 15).
Put on your sauce and all your yummy toppings, move the oven rack right under the broiler and cook for another 3-5 minutes.
