2 tsp peanut oil1/4 tsp red pepper flakes2 thin-cut boneless, skinless chicken breasts cut into bite-size pieces or strips1/2 cup asparagus1/3 cup matchstick carrots1/4 med onion, cut into bite-size pieces or strips1/3 cup frozen snow peas2 tbs sliced almonds2 tsp reduced-sodium soy sauce
Combine oil and pepper flakes in a med-hot skillet
Add chicken adn cook for 2-3 minutes stirring frequently
Add remaining ingredients and cook for 2-3 more minutes stirring frequently. Serve over brown rice if desired.
