Super Easy and Quick Chicken Cordon Bleu

Small skinless chicken breast (about 3oz)2 slices of thinly sliced ham (or 1 slice of prosciutto)1 wedge of Laughing Cow Light Swiss Original Cheese (or light garlic and herb cheese)1/4 cup Ian's Wholewheat Panko Breadcrumbs (you can use other wholewheat breadcumbs just recalculate the calories accordingly. I like these ones as they are light and stay crispy)Fat free milk (to dip chicken in so breadcrumbs stick)Seasonings
Preheat oven to 375F
Take chicken breast and slice in half horizontally but stop before you go all the way through (you just want to butterfly it so you can fill the center)
Open up your chicken breast and place your ham in the center.
Take your cheese triangle and spread it on the center of the ham then fold the ham all around the cheese so that it is covered.
Close your butterflied chicken so that the ham is inside it.
Dip the chicken in the milk and let any excess drip off.
Cover the entire chicken breast with a coating of the panko breadcrumbs.
Place your chiken on a baking tray (covered with foil makes for easier clean up)
Add and desired sesonings to the chicken.
Bake at 375F for 20 - 25 minutes.
