Papaya Fruit Cup

1 Medium Papaya1 Large Banana1 Large Peach 3 Small juicy Limes1-2 t Lime zest2 T Mint, finely chopped1 1/2 T Grade B Maple Syrup (grade A will work too)Garnish: Lime zest and Mint sprigs
1. Peel, skin, seed all of the fruits. Slice the papaya into bite sized chunks. Slice bananas thickly. And slice peaches into thinner bite sized slices.
2. Add all the fruit to a large mixing bowl.
3. Finely chop the mint. Add to bowl.
4. Zest and juice the lime. Add juice to the bowl. Add half of the lime zest. Save the remaining zest for garnish.
5. Toss gently.
6. Chill until ready to use. Serve same day. Bananas and papaya will turn gooey overnight.
7. When ready to serve, place in martini glasses. Add some of the juice to each glass.
Garnish with mint and zest.
Serving Size: Makes about 5-6 cups
