Sesame Peanut Noodles

Ingredients
For Noodles:8 oz Whole Wheat SpaghettiFor Dressing:2 Tbs rice vinegar1/4 cup low sodium soy sauce1/4 cup peanut butter2 Tbs grated ginger1 Tbs dark sesame oil1 tsp brown sugarJuice of one lime1/2 cup water, hotFor Assembly:1/2 bag store-bought coleslaw mix1/2 cup red bell pepper1/2 cup cilantro, chopped1/2 a lime, squeezed1/2 cup apple1/2 cup jicama1 tsp toasted sesame seeds2 scallions, julienneOptional garnishes:1/2 cup dry-roasted peanutschopped cilantrolime wedges
Directions
Follow package instructions to prepare pasta, drain and run under cold water.

Combine all the ingredients for the dressing in a small mixing bowl and whisk together, add to pasta in a large bowl and toss. Stir in coleslaw mix, pepper, and cilantro, squeeze lime over and toss.

Add the remaining ingredients, toss, cover and refrigerate one hour.

    I made this for a BBQ this summer and I can't count the number of people who asked for the recipe. I doubled it and think it actually made way more than 12 servings. Didn't add the apple or jicama, so I upped the peppers. Absolutely delicious and easy. - 8/6/18
