Introduction

This is to die for on chicken and rice. Not low in fat or calories, but very nutritious and filling; it is high in protein and minerals.

Ingredients

    3/4 cup low fat coconut milk
    6 T peanut butter, I use chunky
    2 T Thai fish sauce
    2 T fresh lime juice
    2 T honey
    4 T fresh finely chopped cilantro

Directions

Add all ingredients together in microwave safe bowl. Microwave for 1 to 1.5 minutes to melt coconut milk and peanut butter. Whisk together. One serving is 1/4 cup. Makes 6 servings.

    What is fish sauce? Is it a sauce to put on fish or a sauce made out of fish? I'm a vegetarian so I was curious :) - 4/10/09

    It's a sauce made out of fish. You get it in the oriental section of the grocery store.

    It's even better when you marinate the chicken in lime juice, ginger, and garlic before cooking the chicken.

    I don't like the taste of fish much as was wondering if I could omit the fish oil? Would it taste okay? - 1/13/10

    It's not oil, its a water based fish sauce. You can omit it.
