Coconut Oat Pancakes

Ingredients
Steel Cut OatsCinnamon, groundSultanasDessicated coconutAlmond extractEgg whites, fresh
Directions
Mix oats with a little water and microwave for a few seconds to soften the oats.

Add cinnamon, sultanas, coconut and almond extract and mix well

Add egg whites and mix well

Prepare a skillet with your oil (I used coconut oil)

Spoon mixture evenly into pan and lightly cook one side, turn and with spatula, flatten the pancake and let it cook until a light golden brown. Each pancake only takes a few minute to cook.

Serve warm

Serving Size: Makes 4-5 pancakes depending on size
