Dark Chocolate Zucchini Bread

Ingredients
1/3 cup Grape Seed Oil2.5 cups Whole Wheat White Flour2 cups Shredded Zucchini1 cup natural sugar3/4 tsp Salt1 tsp Baking Soda1.5 tsp Baking Powder2 tsp Vanilla Extract1/2 cup Unsweetened Apple Sauce2/3 cup Dark Chocolate Chips
Directions
Preheat oven to 350 F
Beat wet ingredients in Medium bowl (not Zucchini)
Mix dry ingredients in Large bowl (not Chocolate Chips)
Stir Zucchini and Chips into wet mixture
Combine wet and dry mixture
Pour into prepped loaf pan or 3 prepped mini loaf pans (I greased with earth balance then dusted with flour to prep)
Bake mini loaf pans 30-35 min, Loaf pan 50-60 min, or until toothpick comes out clean.

Serving Size: Makes 3 mini loaf pans or 1 loaf
