Healthy Beef Stew Over Brown Rice

Directions
Heat olive oil in skillet until hot. In a large ziploc bag, combine garlic powder, flour, and salt and pepper; add beef (cut into stew sized chunks) and toss to coat. Add beef to hot skillet until just browned on all sides.

Put beef into a crock pot on the low setting. Add 2 cups of hot water or enough to just cover your beef. Add 1 or 2 bay leaves for flavor or whatever herbs you like. Let the beef stew for 3-4 hrs. At the end of this time chop potatoes, carrots, celery, onions and green beans (I used frozen beans) and add to the crock pot. Let these cook for at least 1 hr. or to taste(firmness).

Cook brown rice according to package directions.

Serve one cup of stew over a 1/4 cup of rice.
