Waldorf Chicken Salad

2 full chicken breasts, diced (I use the rotisserie chickens with skin removed for flavour)1 medium apple, diced1 medium stalk celery, diced1 cup grapes, halved1/2 cup Hellman's Light Mayo1/2 cup chopped walnuts1/4 cup raisins1/4 cup scallions1/4 cup sunflower seedsjuice from one lemonsalt & pepper to taste
Dice all ingredients and mix in a large bowl. To lighten up the recipe, you can half the mayo with Greek yogurt. A couple tablespoons of orange juice is also a nice addition.
