Crock Pot Eggplant Marinara

Ingredients
Eggplant, fresh, 1.5 eggplant, unpeeled (approx 1-1/4 lb) Onions, raw, 1 cup, chopped Tomato Paste, 1 can (6 oz) 2 14 ounce cans of tomatoes, with italian seasoning Red Wine, 1 glass (3.5 fl oz) Garlic, 3 tsp chicken bullion cube, 2 serving
Directions
Chop eggplant into 1 inch cubes.
Add all ingredients to crock pot and simmer on low for 8-10 hours.

Serving Size: Makes around 10 one cup servings - depending on size of eggplant.
