16 oz Elbow Macaroni1 red bell pepper, chopped1 medium onion, chopped1 C shredded carrots2 C broccoli, steamed "al dente"2 10.75 oz can chicken breast (or meat of your choice)1 Tbsp dried parsley2 tsp dill weed2 tsp mustard1 Tbsp minced garlic2 tsp paprika3/4 C Hellman's Low Fat Mayo3/4 C Light Sour Cream1 Tbsp Extra Virgin Olive OilSalt and pepper to taste
Chop veggies and in the mean time lightly steam the broccoli just to take away some of the hard crunch.
Mix all ingredients in a large bowl. Enjoy!
