Honey Pumpkin Cookies

Ingredients
4 Tbsp Light Margarine1/4 cup honey1 Tbsp water1 tsp vanilla1 cup canned pumpkin1 cup unbleached white flour1/2 cup wheat germ1/2 cup rolled oats1 tsp baking soda1 tsp cinnamon1/2 tsp ginger1/2 tsp nutmeg
Directions
Preheat oven to 350 F. Spray a cookie sheet with cooking spray. In a large bowl combine margarine, honey, water, and vanilla. Beat on low, then add pumpkin and mix until well combined. In a separate bowl combine dry ingredients. Add to pumpkin mixture and stir until well blended. Drop batter by spoonfuls (about 1/2 Tbsp) onto prepared cookie sheet. Bake 12-14 minutes.
