Easy Beef Stew

Ingredients
2 lbs. stew meat1/4 c. floursalt & pepper to taste2-3 tsp. olive oil1/2 medium onion, chopped2 teaspoons minced garlic1 can (14.5 oz) diced tomatoes with oregano, basil, and garlic2 carrots, sliced2 stalks celery, sliced4 medium potatoes, peeled and cubedAny other veggies you want (I clean out my fridge of leftovers)Bay leaf, optional1/2 cup wineWater or broth to cover
Directions
Combine flour, salt, and pepper. Dredge meat in flour. Heat oil in large pot. Brown meat, onion, and garlic, in batches if nessessary, in oil. Add all other ingredients and cover with water or broth. Stir, making sure to get all the yummy bits off the bottom of the pan. Bring to a simmer and cook until veggies are tender. Remove bay leaf and serve with crackers, corn bread, crusty bread, anything you like.
