Ham Soup

Ingredients
2 cups cubed Ham (I use smoked neck bones or hocks sometime just to add flavor)water1/2 tsp salt1/4 tsp garlic powerpepper to taste1 medium onion choppedI (28 oz.) can of diced tomatoes3 baking potatoes cubed1 cup sliced carrotsUse large pot half filled with water and add above ingredients. Let cook until potatoes and carrots are done.Add: 1 cup corn1 cup rice Simmer until ready to eat.
Directions
Use large pot (holds at least a gallon). Fill about half to a little more with water. Add seasoning to taste. (you may like more than what is listed). Add onion, ham, tomatoes, potatoes, & carrots. Cook until potatoes and carrots are done. Add corn and rice. Simmer until rice is done.

    Everyone enjoyed this soup immensely. I didn't have any corn or rice but substituted with green savoy cabbage and zucchini and it was very tasty and filling. - 1/1/08
