Curry Chicken Salad

Ingredients
1 lb cooked chicken breast (shredded or chopped, 465 grams) I used 9-10 chicken tenderloins1/2-1 cup chopped celery2 cups seedless grapes, halved1/2-1 cup chopped nuts (almonds or pecans)1/4 c low fat mayonnaise1/4 c homemade chicken broth (reduced from 1 cup)1 tbs soy sauce1 lime juiced1 tsp curry powder1 tbs sugar-free Polaner apricot preserves (what I had)Salt to taste
Directions
Add all ingredients to a mixing bowl and stir until well blended. Taste for seasoning. Refrigerate and serve on sandwiches or on top of a bed of greens.

Rotissaried chicken works great if you want easy and more than breast meat.
