Perfect roasted chickpeas

3 15-oz cans chickpeas (garbanzo beans)2 tsp extra-virgin olive oilSea salt, black pepper, garlic powder, and/or other seasonings to taste
Preheat oven to 450 degrees.
Drain chickpeas and rinse them well. Blot them dry with a paper towel and spread them on 2 cookie sheets.
Roast the chickpeas for 30-45 minutes. You will want to take them out and give the pans a shake once or twice during roasting. Toward the end of roasting, keep a close eye on the chickpeas, as they can burn quickly.
The chickpeas are done roasting when they are golden-brown and crunchy.
Toss the chickpeas in the olive oil, and season to taste with your favorite combination of herbs and/or spices. I like them seasoned very simply with salt, pepper and garlic powder.
These will keep for several days if you store them in an airtight container.
