Pumpkin Bread

Ingredients
2+1/3 cup whole wheat flour (or ww pastry flour)1 cup all-purpose flour1 tbs baking powder2 tsp baking soda1 tsp salt1 tsp ground cinnamon1 tsp ground nutmeg1/2 tsp ground allspice1 cup splenda for baking (if using regular sugar, use 2 cups)1/2 cup egg beaters1/2 cup canola oil1/2 low fat buttermilk2 large eggs2/3 cup water1 (15 ounce) can pumpkincooking spray
Directions
Preheat oven to 350. Mix flours, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice in a bowl, set aside. Place sugar blend, egg substitute, oil, buttermilk, and eggs in a large bowl. Beat with mixer at high speed until blended. Add water and pumpkin, mixing at low speed until blended. Add flour mixture, beating at low speed just until blended. Spray 2 loaf pans with cooking spray. Spoon batter equally into the two pans. Bake at 350 for 1 hour or until toothpick inserted comes out clean. Cool 10 minutes in pan, remove, cool completely (although is good with butter while still warm). Makes 2 loaves, 12 slices per loaf.
