Chicken, Zuchini, Mushroom Rollups

Ingredients
Chicken Breast, no skin, 2.5 breast, bone and skin removed (remove)Summer Squash, .5 medium (remove)HyVee Mozarella Cheese (Low moisture, part skim), 0.25 cup (remove)Parmesan Cheese, shredded, 4 tbsp (remove)Garlic, 3 tsp (remove)*365 Brand Panko Bread Crumbs, .25 cup (remove)Bread crumbs, dry, grated, seasoned, .25 cup (remove)Lemon juice, 1 tbsp (remove)*Extra Virgin Olive Oil, 1 tbsp (remove)Mushrooms, canned, .75 cup (remove)
Directions
Preheat oven to 450.
Spray a casserole dish.
Add .5 tablepoon of Olive Oil to a skillet, add garlic, cook for 1 minute,add shredded zuchini, and mushrooms. Once they cook down add 2 tbsp. of parmesan cheese and 1tbsp. of Mozarella cheese. Pound out chicken breasts and cut in halves. Spread the zuchinni mixture onto the chicken breasts, roll from wide side to narrow side. In Small bowl mix the lemon juice and olive oil, in another small bowl mix the bread crumbs with 2 tbsp. of parmesan, and 2 tbsp. of Mozarella. Dip stuffed breasts into liquid and then roll in bread crumb/mixture. Place in casserole dish sprayed with cooking spray. Bake for 35 minutes.
