Sweet Potato Chili

Ingredients
2 medium sweet potatoes peeled and diced into 2in cubes1 yellow onion, diced1 red bell pepper, seeded and chopped1 (14.5 ounce) can no salt added diced tomatoes1 (15 ounce) can kidne beans, drained and rinsed2 garlic cloves, minced1 tablespoon chili powder1 teaspoon smoked paprika1 teaspoon chili powder1/2 cup orange juice1 cup water
Directions
1) Use a 6 quart slow cooker. Add sweet potato, onion, pepper, tomatoes, beans, garlic and spices.

2) Pour in OJ and water.

3) Cover and cook on low for 6-8hours or until onion is translucent and sweetpotato is fork tender.
