Chicken Caprese Casserole

Ingredients
2 large boneless, skinless chicken breasts3/4 cup chopped fresh mozzarella cheese3/4 cup chopped tomato1/2 cup chopped fresh basil1/2 medium sweet onion chopped1/2 cup low fat cream cheese1 TBS salt1 TBS ground pepper2 TBS minced garlic1 TBS lemon juice1 TBS olive oil2 TBS basalmic vinegar1/4 cup shredded mozzarella1/2 cup bread crumbs (I used plain)
Directions
Preheat oven to 350 degrees.

Mix all ingredients together except 1/4 cup of shredded mozzarella cheese and bread crumbs.

Spread mixed ingredients in 8x8 pan, sprinkle shredded mozzarella on top, and then sprinkle bread crumbs on top of that.

Bake for 30 minutes, dish up and enjoy!

    Made this for my family last night. It was very good! HOWEVER I noticed while preparing the dish that the measurements for salt and pepper seemed VERY large. I did not measure exactly but I know I used less than a teaspoon of each. - 1/8/13
