Sweet Potato Corn Muffins - 2 points plus

Ingredients
1 cup mashed sweet potatoesnonstick spray1 cup cornmeal1/2cup flour2 tsp baking powder1/3 tsp salt1/8 tsp cayenne pepper1/3 cup milk1 large egg white1 can cream style corn
Directions
Preheat oven to 375. cook and mash sweet potatoes - 1 large yam yields about 1 c mashed. Poke it with a fork adn microwave it on high for 4-6 minutes. Combine wet and dry ingredients in seperate bowls then mix together. Spray muffin tins with non stick and fill 3/4 full. Bake for 25-30 minutes. Cool on a baking rack and serve warm or at room temperature
