Granna's Favorite Sausage and Onions

Hillshire Farms Lite Smoked Sausage (2 packages)2 Large Raw OnionsOne package sliced mushrooms24 oz Small Red or Golden Potatoes One Carton 99% fat free Chicken BrothCavendar's Greek Seasoning.
Slice sausage into bite-sized pieces and brown in a skillet over medium-high heat. Remove sausage from skillet and sautee onions and mushrooms in the fat from the sausage. Meanwhile, quarter potatoes and cook in microwave for 5 to 7 minutes. When onions are about 50% done (or halfway to being transluscent), add sausage and microwaved potatoes and stir. Sprinkle with seasoning. Add 1/3-1/2 container of chicken broth. Cook on medium until liquid is gone. Add the rest of the liquid and repeat until liquid is gone. Serve hot.
This is one of those recipes that's great the next day... You can also divide into 8 servings for better stats. It will still be plenty, but I was hungry tonight!
