4 cups fresh okra, chunked2 tbsp olive oil1 tbsp course pepper1/4 tsp salt
Directions
Preheat oven to 425. Toss ingredients in a gallon bag together. Spread on non-stick cookie sheet and roast.

    I loved this! It tasted like fried okra without the batter. I cut the olive oil down to 2 teaspoons to save on calories though. - 2/27/13
