Ginger Lime Lemongrass Chicken Noodle

Ingredients
3 Cups Chicken Stock1 Chicken breast, cut into chunksHalf a bag of egg noodles, whole wheat1 large carrot cut into small chunks1 onion, diced5 cloves of garlic, finely diced1.5 Cups of green beans1 Cup corn1 thumb of ginger root, grated1 thumb of lemongrass (I used the tube version)Lime juice from one lime3 Tb olive oil
Directions
Saute the onion and carrot in the oil. Once soft, add the garlic for a minute (don't let it burn). Add stock and bring to boil. Add green beans and corn. Return to boil. Grate in the ginger and lemongrass. Add the noodles. If your chicken is frozen, add it now. Cook for as long as the noodles indicate al dente. Add the lime juice, salt and pepper. You can also add more lime and hot sauce to the bowls. This tastes really good with Sriracha. The kids loved this.
