Tasha's Chicken Noodle Soup

1 Tab Xtra Virgin Olive Oil1 Small Onion, diced1 Large Carrot, diced5 Cups Chicken Stock130g Shredded Cooked Chicken Breast1 Cup Sliced Green Beans60g Rice Vermicelli Nooodlesparsley to Serve
Heat oil in large saucepan.
Add onion and carrot and cook for 2 mins or until soft.
Add chicken stock and bring to boilo.
Reduce heat and simmer for 3mins.
Add chicken and beans and simmer for 6 mins or until beans are tender.
Add rice noodle and simmer a further 2 mins.
Divide among warm soup bowls and sprinkle with parsley/
